HOSHANHO 7-Inch Japanese Santoku Chef Knife — High-Carbon Stainless
Product description
Blade construction: The blade is fully forged from a three-layer laminated assembly using 10Cr15CoMoV stainless steel at its core. That high-end alloy contains roughly 0.9% carbon and is heat-treated to an indicated 62HRC, giving the edge high hardness and longevity while the outer layers add toughness and corrosion resistance.
Edge and finish: The cutting edge is hand-honed to about a 15° angle per side for a keen, precise bite. The blade face has a frosted/polished appearance produced by a specialized finishing process, and paired dual grooves (scallops) along the flats reduce drag and help keep food from clinging to the steel.
Handle and ergonomics: The handle is crafted from African pakkawood, chosen for its dimensional stability and resistance to thermal expansion and cracking. It’s contoured for a comfortable grip that favors control and balance during repeated chopping, slicing, and rocking motions.
Dimensions and use: This 7-inch Santoku is intended as a multi-purpose chef’s knife suitable for chopping, slicing, dicing, filleting and portioning fruits, vegetables, bread and meats. Its blade length and profile make it well suited to both push-cut and rocking techniques commonly used in home and professional kitchens.
Packaging and purpose: Each knife ships in an elegant presentation box, making it appropriate as a gift for cooks or knife enthusiasts. It’s marketed for both domestic and restaurant use, offering an attractive combination of aesthetic detail and everyday practicality.

Fantastic Knife — Sharp, Balanced, Ideal Size
I reach for this knife constantly. It feels beautifully balanced — not too heavy yet with enough mass to glide through chopping tasks. The wood handle looks premium and sits nicely in the palm. Out of the box the blade was razor-sharp and has kept a keen edge longer than I expected. The 7-inch length is versatile: big enough for larger veg and meat, but still precise for finer work. The profile is great for chopping and gentle rocking. Overall a reliable go-to in my kitchen.

Outstanding Knife — Use Caution
Lovely knife, but extremely sharp. I cut my finger opening the box before even using it on food. A bandaid fixed it, but be cautious on first use. Would buy another from this brand.

Impressively Sharp — Nearly Cut Myself
Picked it up during a discount to test quality before investing in more pieces. It’s frighteningly sharp — I nicked my finger and had to bandage up. Excellent weight and balance. Hoping to find a matching set with a block in the future.

A Trusty Kitchen Companion
Solid and comfortable to use, very sharp. I kept the small protective sleeve on the spine tip to avoid accidents. So far very satisfied.

Solid Blade for the Money
I already owned their Nakiri and added this Santoku from the same line. The three-layer construction is visible at the grind and a claimed 62HRC core is impressive if accurate. The design is attractive and the pakkawood handle is comfortable for both me and my partner. It’s not made in Japan, but the feel and finish are unexpectedly good for the cost.

New Favorite — Razor Sharp and Precise
I’ve tried many knives, but this Santoku impressed right away. The handle is ergonomic and well-balanced with no wobble. The blade shaves through meat, veg and herbs without crushing. The subtle patterning on the blade and the presentation box make it feel premium — also great as a gift. I now use it daily and rarely pick other knives.
