Ingredients
For the streusel:
- ⅓ cup brown sugar
- ¾ teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- 3 tablespoons flour
- ¼ cup butter, cold and cut into small pieces
- ⅓ cup finely chopped walnuts
For the cake:
- 2 ¼ cups all-purpose flour
- ½ teaspoon ground ginger
- Pinch ground nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup finely chopped crystallized ginger
- 6 tablespoons unsalted butter, at room temperature
- ¾ cup dark brown sugar
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 1 ¼ cups buttermilk
- 1 medium Granny Smith or Golden Delicious apple, peeled, cored and coarsely chopped
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Thoroughly butter and flour a 10-cup bundt pan, ensuring all nooks and crannies are coated, then set it aside.
- To prepare the streusel, combine the brown sugar, ground ginger, cinnamon, flour, and cold butter in a medium bowl. Use your fingertips to rub the butter into the dry ingredients until large, coarse crumbs form. Stir in the chopped walnuts and refrigerate until you are ready to use it. This helps keep the streusel crumbly during baking.
- For the cake batter, whisk together the flour, ground ginger, nutmeg, baking powder, baking soda, and salt in a large bowl. Once well combined, stir in the finely chopped crystallized ginger and set this dry mixture aside.
- In a separate large mixing bowl, using an electric mixer, beat the room temperature butter until it is light and fluffy, about 2-3 minutes.
