  • 2 pounds red onions, peeled, halved, and sliced thinly
  • A scant 1⁄2 cup olive oil
  • 1 teaspoon sea salt
  • 1⁄2 teaspoon ground black pepper
  • 2 bay leaves
  • 2 rosemary sprigs
  • 1 cup brown sugar
  • A scant ⅓ cup dry white wine
  • A scant ⅓ cup red wine vinegar
  • 5 teaspoons balsamic vinegar

Instructions

  1. In a large, heavy frying pan, add the olive oil and heat over medium flame. Add the thinly sliced onions and toss them to ensure they are well coated with the oil. Cover the pan and allow the onions to cook gently, stirring occasionally, until they begin to soften and develop a light color, about 15-20 minutes.
  2. Uncover the pan, then add the sea salt, ground black pepper, bay leaves, and rosemary sprigs to the onions. Continue to cook for another 20 minutes, stirring occasionally, until the herbs are fragrant and the onions are further softened and caramelized.
  3. Stir in the brown sugar, dry white wine, red wine vinegar, and balsamic vinegar. Bring the mixture to a gentle simmer. Continue to simmer, uncovered, until all the liquids have significantly evaporated and the onions are very soft and jam-like in consistency, which will take approximately 30 minutes. It is crucial to stir frequently during this stage to prevent the onions from sticking to the bottom of the pan and burning.
  4. Carefully remove the bay leaves and rosemary sprigs from the cooked onion marmalade. Pour the warm onions into a clean, sterilized canning jar. Allow the marmalade to cool completely to room temperature before sealing the jar tightly. Store the sealed jar in the refrigerator. For optimal freshness and flavor, use within two weeks, unless you opt for a proper canning process to extend its shelf life.
