- ¾ cup butter
- ⅔ cup half & half or evaporated milk
- 1 12-ounce bag white chocolate chips
- 1 7-ounce jar marshmallow creme, Kraft recommended
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 3 tablespoons red food coloring
Instructions
- Line a 9 x 9-inch pan with non-stick foil, leaving an overhang on the sides for easy removal. Set aside.
- Place semi-sweet chocolate chips and red food coloring in a separate heat-safe bowl and set aside. This will be for your red fudge layer.
- In a large, heavy saucepan, combine the sugar, butter, and half and half or evaporated milk. Stir well to mix.
- Cook the mixture over medium heat, stirring occasionally, until it reaches precisely 234ºF (112ºC) on a candy thermometer. This is the soft-ball stage, crucial for the right fudge consistency.
- Immediately remove the saucepan from the heat. Add the white chocolate chips, the entire jar of marshmallow cream, and vanilla extract. Mix vigorously until all ingredients are well combined and smooth.
- Once the white fudge mixture is well mixed, quickly scrape half of it into the bowl containing the semi-sweet chocolate chips and red food coloring. Mix thoroughly until the chocolate chips are melted and the mixture is smooth and a uniform vibrant red color.
