  • 6 ounces semi-sweet chocolate, chopped
  • 5 tablespoons light corn syrup

Instructions

Whisk together sugar, cornstarch, and salt in a large saucepan. Slowly whisk in milk. Heat to a boil over medium heat, whisking constantly. Lower heat and continue to whisk until mixture thickens and large bubbles appear. Remove from heat and stir in butter and vanilla. Transfer custard to a large bowl, cover surface directly with plastic wrap, and cool in the fridge for about 2 hours, or until completely chilled.

After about 2 hours, place one layer of chocolate graham crackers along the bottom of your Lagostina Lasagnera (or a 9 x 13-inch baking dish). Use smaller pieces to fill any open spaces, creating an even layer.

Whip 2 cups of heavy cream with Whip-It (if using) until stiff peaks form. Gently fold about 1/3 of the whipped cream into the cooled custard until well combined. Then, carefully fold the remaining whipped cream into the custard until fully incorporated.

In a microwave-safe bowl, combine chopped chocolate, corn syrup, and the remaining 3/4 cup of heavy cream. Microwave for about 60 seconds. Whisk until smooth; if chocolate is not completely melted, microwave again in 15-20 second intervals, whisking thoroughly after each, until smooth. Allow to cool for about 10 minutes, until slightly thickened but still pourable. Pour the ganache over the top layer of graham crackers, and using an offset spatula, smooth to cover the entire surface of the dessert. Chill the lasagna for at least 6 hours before serving, or preferably overnight, to allow the crackers to soften and the dessert to set.

Notes

The Whip-It is a whipped cream stabilizer. It will prevent the whipped cream from getting watery and adds a little more firmness to the filling. It will not make the filling firm enough to make perfect slices, so don’t worry if you don’t have any on hand.
