Easter Brownie Cookies are the ultimate chewy, rich, and intensely chocolatey treat, perfect for celebrating the spring season! Loaded with delicious chocolate chips and adorned with vibrant M&Ms, these delightful cookies are an ingenious way to utilize any leftover Easter candy. Their fudgy texture and decadent flavor make them an irresistible addition to any holiday gathering or a simple sweet indulgence.
For years, these luscious Chocolate Brownie Cookies have been a staple in my kitchen, bringing joy and a burst of chocolate goodness to every occasion. What makes them truly special for Easter is their effortless transformation into festive Easter Cookies. Simply press a handful of pastel M&M candies onto them while they’re still warm from the oven, and watch them become an instant seasonal sensation. This simple trick not only adds a beautiful pop of color but also repurposes those colorful candies in the most delicious way possible.

Why You’ll Adore These Decadent M&M Brownie Cookies
There’s an undeniable magic in transforming leftover holiday candy into something entirely new and equally delicious. These M&M Brownie Cookies are a prime example of that culinary alchemy. Forget about candy melting into a sticky mess; these cookies offer a delightful crunch and vibrant color, especially with the festive M&Ms. Here are just a few reasons why this recipe will become a cherished favorite:
- **Festive Appeal:** M&Ms are renowned for their wide array of holiday colors, making them an ideal choice for seasonal baking. The pastel Easter M&Ms create a visually stunning contrast against the deep, dark chocolate base of these cookies, making them perfect for your Easter dessert table.
- **Incredible Adaptability:** This brownie cookie recipe is incredibly versatile. While the current version highlights semisweet chocolate chips and Easter M&Ms, I’ve experimented with various add-ins over the years, from white chocolate chips to peanut butter chips, and they always turn out fantastic. Feel free to get creative with your favorite mix-ins!
- **Irresistible Texture & Flavor:** These aren’t just any chocolate cookies; they boast a truly fudgy, chewy interior reminiscent of your favorite brownies. The combination of rich chocolate and the slight crunch from the M&Ms creates a textural symphony that will have everyone reaching for more.
- **Clever Use for Leftovers:** Beyond their deliciousness, these cookies offer a practical solution for post-holiday candy overload. Instead of letting those beautiful Easter M&Ms linger, transform them into a fresh batch of treats that everyone will appreciate.
- **Crowd-Pleaser:** Whether for a family gathering, a school bake sale, or a potluck, these cookies are guaranteed to be a hit. Their familiar flavors and appealing appearance make them universally loved by both children and adults.

Crafting the Perfect Chewy Brownie Cookie Recipe: Step-by-Step
My family has cherished this chewy brownie cookie recipe for many years. From the very first taste of the batter, I knew these were special. They perfectly replicate the beloved flavor and delightful chewiness of classic chocolate brownies, all in a convenient cookie form. Achieving that signature chewy texture is key, and with a few simple techniques, you’ll be baking bakery-worthy results every time.
- **Quality Ingredients Matter:** Begin your baking journey with high-quality ingredients. Using real butter and a reputable brand of unsweetened chocolate makes a significant difference in the depth of flavor. I often reach for Ghirardelli bars, which are widely available and deliver consistent, rich chocolatey results.
- **PRO-Tip: Hand Mixing for Ideal Texture:** To prevent overmixing and ensure your cookies achieve that desirable chewy, fudgy texture rather than a cakey one, opt for a wooden spoon to mix the dough. A stand mixer, if used, should be set to its lowest speed and used sparingly.
- **Patience is a Virtue (for Dough Cooling):** After melting the butter and chocolate, allow the mixture to cool slightly before incorporating the remaining ingredients. If the dough is too warm when you try to scoop it, it will be overly soft and spread excessively on the baking sheet. A few minutes at room temperature will help it firm up to a scoopable consistency.
- **Prepare Your Baking Sheets:** For effortless cookie removal and minimal cleanup, always line your baking sheets with parchment paper. This simple step ensures your beautiful brownie cookies slide right off the pan without sticking.
- **Uniformity with a Cookie Scoop:** To ensure all your cookies bake evenly and look professionally made, use a cookie disher or scoop. This helps create consistently sized rounds of dough, leading to uniform results.
- **Smooth Out Any Spikes:** If you notice any small “spikes” or unevenness on your scooped cookie dough balls (this can happen as dough builds up in the scoop), gently pat them down with a damp finger. This minor adjustment ensures a perfectly round and smooth cookie once baked.
- **PRO-Tip: Cool on the Pan:** Resist the urge to transfer the warm cookies immediately to a cooling rack. Allow them to cool on the baking sheets for a few minutes first. This crucial step gives the cookies time to solidify and set, preventing them from breaking apart as you move them.
- **Don’t Overbake for Chewiness:** The secret to truly chewy brownie cookies lies in not overbaking them. When you pull them from the oven, the centers should still appear slightly underbaked. The residual heat from the hot baking sheet will continue to cook them gently, ensuring they remain wonderfully fudgy and chewy once cooled.
- **PRO-Tip: Garnish with M&Ms Post-Bake:** For the most pristine and vibrant M&M topping, reserve some candies to press into the cookies *immediately* after they come out of the oven. M&Ms baked into the dough tend to crack and lose some of their vibrant color in the oven. Adding them warm ensures a beautiful, bakery-worthy presentation with perfectly intact candy shells.
Customizing Your Fudgy Brownie Cookies: Add-In Ideas
While these brownie cookies are absolutely divine as is, their robust chocolate base makes them a fantastic canvas for various additions. Don’t be afraid to experiment and make them your own!
- **Chocolate Overload:** Enhance the chocolate factor with different types of chocolate chips – milk, dark, or even mini chocolate chips. Chocolate chunks or feves will provide larger, meltier pockets of chocolate.
- **Nutty Crunch:** Add a delightful crunch and earthy flavor with chopped walnuts, pecans, or almonds. Toasting them lightly beforehand can amplify their taste.
- **Sweet & Salty:** For a delectable sweet and salty contrast, try adding pretzels bits or a sprinkle of flaky sea salt on top before baking.
- **Candy Variations:** Beyond M&Ms, consider other chopped candies like Snickers, Rolo (for caramel bursts), or peanut butter cups for different flavor profiles.
- **Seasonal Swaps:** The beauty of M&Ms is their seasonal availability. This versatile recipe can be adapted for any holiday: use red and green M&Ms for Christmas, red and pink for Valentine’s Day, patriotic colors for the 4th of July, or orange and black for Halloween. This means you can enjoy these amazing brownie cookies all year round, not just for Easter!
Frequently Asked Questions About Brownie Cookies
While the candy shells of M&Ms do prevent them from completely melting into a puddle during baking, they are prone to cracking and losing some of their vibrant color when exposed to direct oven heat. For perfectly pristine, colorful M&Ms on the surface of your cookies, it’s best to press them carefully into the hot cookies immediately after they come out of the oven.
Achieving perfectly round cookies involves a couple of simple tricks. First, use a cookie disher or scoop to portion out uniform rounds of dough onto your baking sheet. Second, as soon as the cookies emerge from the oven, and while they are still warm and pliable, use the back of a spatula or a round cookie cutter slightly larger than your cookie. Gently tap the spatula or cutter around the perimeter of each cookie, “coaxing” it into a neat, round shape. This quick maneuver helps solidify their perfect form as they cool.
Absolutely! This brownie cookie dough freezes beautifully. Scoop the dough into individual balls and place them on a parchment-lined baking sheet. Freeze until firm (about 1-2 hours), then transfer the frozen dough balls to an airtight freezer bag or container. They can be stored for up to 3 months. When you’re ready to bake, simply place the frozen dough balls on a baking sheet and add an extra minute or two to the baking time.
Serving and Storage Suggestions
These chewy brownie cookies are fantastic served warm, allowing the chocolate chips to be delightfully gooey. They pair wonderfully with a cold glass of milk, a scoop of vanilla ice cream, or a warm cup of coffee. For a special treat, serve them alongside a dollop of whipped cream or a drizzle of chocolate sauce.
To store these delicious cookies, place them in an airtight container at room temperature for up to 3-4 days. For longer freshness, you can also freeze the baked cookies. Once completely cooled, place them in a freezer-safe bag or container, separated by parchment paper, for up to 2-3 months. Thaw at room temperature or gently warm in the microwave for a few seconds to regain that fresh-baked chewiness.

The Recipe:
Easter Brownie Cookies
20 minutes
10 minutes
30 minutes
2 dozen
Fudgy brownie cookies bursting with chocolate chips and festive M&M’s. The perfect way to use up leftover holiday candy!
Ingredients
- 6 ounces unsweetened chocolate, chopped
- ½ cup butter
- 1¾ cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1¼ cup all-purpose flour
- ¾ cup semi-sweet chocolate chips
- ½ cup Easter M&Ms
Instructions
- Preheat your oven to 350ºF (175ºC).
- In a microwave-safe bowl, melt the chopped unsweetened chocolate and butter. Start with 60 seconds, stir, then heat and stir in 30-second increments until the mixture is completely smooth.
- Add the sugar to the melted chocolate mixture and mix thoroughly until well combined. Then, beat in the eggs one at a time until fully incorporated. Stir in the vanilla extract.
- Gradually add the flour to the wet ingredients, mixing until just incorporated. Fold in the semi-sweet chocolate chips until they are evenly distributed throughout the dough.
- If the dough is too soft to scoop, let it rest at room temperature for a few minutes until it firms up to a workable consistency.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Bake for 10 minutes. The centers of the cookies should still appear slightly underbaked when removed from the oven.
- Immediately after removing from the oven, carefully press 4-5 M&Ms onto the top of each warm cookie for garnish, if desired, to ensure vibrant colors and a beautiful presentation.
- Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. This helps them set and prevents breakage.
Notes
Use a wooden spoon for mixing the dough to avoid overbeating, which can result in cakey cookies instead of chewy ones. If using a mixer, ensure it’s on the lowest speed.
