Ingredients

For the Brownie Layer:

  • 2 cups granulated sugar
  • ⅔ cup unsweetened cocoa powder
  • 1 cup melted butter
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon salt

For the Cookie Layer:

  • 10 tablespoons unsalted butter, at room temperature
  • ⅔ cup packed light brown sugar
  • ⅓ cup granulated white sugar
  • 1 large egg + 1 additional large egg yolk
  • 1 teaspoon vanilla extract
  • 1⅔ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup chocolate chips, plus a few extra for sprinkling on top

Instructions

  1. Prepare Pan & Preheat Oven: Spray a 9×13 inch baking pan with non-stick spray or line with parchment paper/non-stick foil, leaving an overhang. Preheat your oven to 350ºF (175°C).
  2. Mix Brownie Wet Ingredients: In a large bowl, stir together the melted butter, granulated sugar, eggs, and vanilla until well combined.
  3. Combine Brownie Dry & Spread: Add the flour, cocoa powder, and salt to the wet ingredients. Mix until just combined. Spread this brownie batter evenly in the prepared pan.
  4. Cream Cookie Dough Base: To make the cookie dough layer, in a separate bowl, beat the softened butter, brown sugar, and white sugar until light and fluffy.
  5. Add Cookie Wet Ingredients: Beat in the egg, extra egg yolk, and vanilla until well combined.
  6. Combine Cookie Dry & Fold in Chips: Add the flour, baking soda, and salt to the wet ingredients. Mix with a wooden spoon until just combined. Fold in the chocolate chips.
  7. Layer Cookie Dough: Take small pieces of cookie dough, flatten them between your hands, and carefully lay them across the brownie layer, ensuring the entire surface is covered. Gently press the edges together to seal.
  8. Bake: Sprinkle a few extra chocolate chips on top of the cookie layer if desired. Bake for 30-35 minutes, or until the cookie layer is lightly golden and the center is set but still slightly soft.
  9. Cool & Serve: Cool the brookie bars completely on a wire rack before cutting into squares and serving.

Notes

Recipe adapted from Hugs & Cookies XOXO. For extra fudgy brownies and chewy cookies, be careful not to overbake. Chilling the bars before cutting will yield cleaner slices.
