Boston Cream Dream Poke Cake

Boston Cream Pie Poke Cake offers a truly sensational dessert experience, expertly blending the beloved characteristics of a classic Boston cream pie with the delightful moistness of a poke cake. This innovative creation is not just a cake; it’s a culinary journey, delivering a surprise in every bite with its tender texture, creamy vanilla pudding filling, and a decadent blanket of rich chocolate ganache.

The inspiration for this magnificent dessert arose from a simple yet profound request. When asked about his birthday treat, my eldest wisely suggested, “anything you need to make for your blog.” Fortuitously, this Poke Cake Recipe had already been selected for January’s #TwoSweetiePies collaboration, perfectly aligning with a celebratory occasion. The result was a dessert that not only fulfilled a birthday wish but also became an instant family favorite.

The Ultimate Boston Cream Pie Poke Cake: A Dessert Masterpiece

In the world of home baking, poke cakes continue to reign supreme, cherished for their ability to deliver unparalleled moistness and flavor. The magic lies in their design: a freshly baked cake is punctured with holes, allowing a luscious liquid – often pudding, sweetened condensed milk, or fruit purees – to seep deep into its crumb. This infusion transforms an ordinary cake into an extraordinarily tender and juicy delight, promising a burst of flavor with every forkful. Our Boston Cream Pie Poke Cake takes this beloved technique and marries it with the timeless elegance of the classic Boston cream pie.

The components of this poke cake echo the iconic Boston cream pie, which, despite its name, is actually a delicate vanilla butter cake traditionally filled with a rich pastry cream (crème pâtissière) and crowned with a glossy chocolate glaze. For our rendition, we’ve streamlined the process without compromising on taste or texture. Instead of the more intricate French crème pâtissière, we opt for instant vanilla pudding. This clever substitution makes the preparation significantly easier and quicker, yet still delivers that wonderfully creamy, melt-in-your-mouth filling that is the hallmark of a Boston cream pie. The family’s reaction was nothing short of enthusiastic; they absolutely adored it. In fact, after sending some leftovers home with the birthday boy, his roommate promptly texted, asking for another slice! A true winner, indeed.

What Makes This Boston Cream Pie Poke Cake So Special?

This recipe isn’t just a dessert; it’s a celebration of convenience and indulgence. We start with a light and airy vanilla cake base, which provides the perfect canvas for the magical “poke” effect. Once baked and still warm, the cake is generously poked with holes, creating channels for the velvety vanilla pudding to infuse every inch. This process results in a cake that is incredibly moist, tender, and bursting with creamy vanilla flavor. To complete this masterpiece, a homemade chocolate ganache is artfully drizzled over the pudding layer, creating a rich, glossy, and intensely chocolatey finish that perfectly balances the sweetness of the cake and pudding.

Beyond its incredible taste, this Boston Cream Pie Poke Cake is remarkably versatile. It’s the ideal dessert for birthdays, potlucks, family gatherings, or simply when you’re craving a sweet escape. Its vibrant flavors and appealing presentation make it a showstopper, always eliciting compliments and requests for the recipe. Moreover, the ease of preparation, thanks to the use of instant pudding, means you can achieve bakery-quality results right in your own kitchen without spending hours on complex techniques.

The Classic Inspiration: Boston Cream Pie Demystified

Before diving into our poke cake adaptation, let’s appreciate its roots. The Boston Cream Pie, often mistakenly called a pie, is actually a cake! Invented in the mid-19th century at Boston’s Parker House Hotel, it features two layers of sponge cake separated by a rich, custard-like pastry cream and topped with a shiny chocolate glaze. It’s renowned for its elegant simplicity and the harmonious blend of vanilla cake, creamy filling, and decadent chocolate. Our poke cake version captures all these essential flavors and textures, making them even more accessible and delightfully moist.

The Poke Cake Phenomenon: A Secret to Unmatched Moistness

Poke cakes burst onto the baking scene as a revolutionary way to infuse cakes with extra moisture and flavor. The concept is brilliantly simple: bake a cake, poke holes in it, and pour a liquid (like pudding, jello, or sweetened condensed milk) over the top. The liquid seeps into the holes, saturating the cake from the inside out. This technique not only guarantees an incredibly moist dessert but also adds an exciting flavor dimension and a beautiful marbled appearance when sliced. It’s a game-changer for anyone who loves a tender, juicy cake!

Gather Your Tools: Essential Equipment for This Recipe

To successfully bring this Boston Cream Pie Poke Cake to life in your kitchen, you’ll need a few key pieces of equipment. Having the right tools ensures a smooth baking process and a perfect result every time.

  • 9 x 13 inch baking pan: Essential for baking the cake base evenly. A sturdy metal pan is recommended for consistent heat distribution.
  • Chopped semi-sweet chocolate: While an ingredient, having it pre-chopped or ready to chop ensures your ganache comes together quickly and smoothly. Quality chocolate makes a significant difference in the final taste of your ganache.
  • Wooden spoon handle: The perfect tool for creating those crucial “poke” holes in your cake, ensuring the pudding soaks in beautifully.
  • Hand mixer or stand mixer: For effortlessly beating eggs and sugar and mixing the cake batter until just combined, ensuring a light and fluffy cake.
  • Whisk: Indispensable for whisking the ganache until it’s perfectly smooth and glossy.
  • Saucepan: For heating the heavy cream to just a boil for the ganache.

Having these items on hand will make the baking process enjoyable and efficient, leading to a perfectly executed Boston Cream Pie Poke Cake.

(4.6/5 based on 5 reviews)

Ingredients

For the Cake:

  • 2 cups sugar
  • 4 eggs
  • 2 ½ cups all-purpose flour
  • 1 cup milk
  • ¾ cup vegetable oil
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract

For the Filling:

  • 2 small boxes instant vanilla pudding mix (prepare according to package directions)

For the Ganache:

  • 8 ounces semi-sweet chocolate, finely chopped
  • 1 cup heavy cream

Instructions

  1. Prepare the Cake Pan: Grease a 9 x 13 inch baking pan thoroughly. Set aside. Preheat your oven to 350ºF (175ºC).
  2. Combine Wet Ingredients: In a large mixing bowl, beat the eggs and sugar together until they are well combined and light in color.
  3. Add Dry & Liquid Ingredients: Gradually add the flour, milk, vegetable oil, baking powder, salt, and vanilla extract to the egg mixture. Mix on low speed just until all ingredients are combined and no dry streaks of flour remain. Be careful not to overmix.
  4. Bake the Cake: Pour the prepared batter evenly into the greased 9 x 13 inch pan. Bake for 40-50 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean.
  5. Poke the Cake: Once the cake is out of the oven, use the handle of a wooden spoon or a similar round object to poke holes evenly throughout the entire warm cake, going almost all the way to the bottom.
  6. Prepare and Add Pudding: While the cake cools slightly, prepare the instant vanilla pudding according to the package directions. Immediately pour the prepared pudding evenly over the warm, poked cake, ensuring it seeps into all the holes. Let the cake cool completely to room temperature.
  7. Make the Ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to boil. Remove from heat immediately.
  8. Combine Chocolate and Cream: Place the finely chopped semi-sweet chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit undisturbed for 2 minutes to allow the chocolate to melt.
  9. Whisk Ganache: After 2 minutes, whisk the chocolate and cream mixture until it is completely smooth and glossy. If it appears too thick, you can gently warm it over a double boiler or in short bursts in the microwave, stirring frequently, until it reaches the desired consistency.
  10. Finish and Chill: Let the ganache cool for a few minutes until it thickens slightly but is still pourable. Then, pour it evenly over the cooled pudding layer, spreading it gently to cover the top of the cake. Refrigerate the cake for at least 2-3 hours, or until thoroughly chilled and set.
  11. Serve: Once cold, slice the Boston Cream Pie Poke Cake and serve. Enjoy!

Notes

*Ganache Consistency Tip: Both my ganache and Danielle’s set up perfectly, but some bakers have found theirs did not thicken enough. If your ganache is very runny, don’t despair! Let it sit out at room temperature for an hour and then check its consistency again. If it’s still too thin, gently rewarm the mixture over a double boiler or in the microwave in 15-second intervals, stirring well after each. Add 2-4 more ounces of finely chopped semi-sweet chocolate, stir until melted and smooth, and then let it cool until it reaches a pourable yet thick consistency before applying to the cake. Chilling the finished cake will help the ganache set further.

Make-Ahead Tips: This cake is even better the next day! You can prepare it a day in advance. Store covered in the refrigerator. The pudding will continue to meld with the cake, enhancing its flavor and moisture.

Storage: Keep leftover Boston Cream Pie Poke Cake covered in the refrigerator for up to 3-4 days. It’s best served chilled.
