Why This S’mores Pie is a Must-Try Summer Delight

If the mere thought of a gooey s’mores around a crackling campfire fills you with joy, then prepare to be utterly smitten by this pie. It brings all those beloved flavors to your table with an added touch of elegance and convenience.

  • Unforgettable Flavor Profile: Every bite delivers a symphony of textures and tastes – the crisp, buttery graham cracker crust, the intensely rich and fudgy chocolate custard, and the ethereal, toasted homemade marshmallow topping. It’s a harmonious blend that captures the essence of s’mores perfection.
  • Elevated Classic: This isn’t just a dessert; it’s an experience. It transforms a rustic campfire treat into a sophisticated pie that’s perfect for entertaining, yet retains all the comforting nostalgia. Your guests will be impressed by its beautiful presentation and exquisite taste.
  • Superior Marshmallow Topping: Our recipe features a homemade marshmallow topping, crafted with real vanilla extract. This offers a vastly superior flavor and texture compared to simply melting store-bought marshmallows. It’s light, airy, and toasts beautifully for that authentic s’mores experience.
  • Perfect for Any Occasion: While it shines as a 4th of July dessert, its charm isn’t limited. It’s ideal for summer picnics, backyard barbecues, birthday parties, or any gathering where you want to serve a dessert that’s both fun and fancy.
  • Nostalgic Connection: The classic s’mores ingredients are beautifully represented, taking you back to cherished childhood memories of summer nights and starry skies, but in a more refined form.

As the 4th of July approached each year, I used to scramble for red, white, and blue recipes for our annual neighborhood potluck. But then I remembered the S’mores Pie I first created years ago – and realized it was the perfect embodiment of Americana. S’mores, for me, evoke vivid memories of summer holidays spent in Colorado. We’d often hike to our favorite picnic spot, nestled among towering pines along the picturesque Roaring Fork River, the air filled with the scent of pine and distant campfires.

After grilling our brats or burgers, the real adventure began: hunting down the perfect toasting sticks for our marshmallows. It was a ritual of trial and error; inevitably, at least one marshmallow would meet an untimely end in the flames, incinerated to a crisp, while we diligently strived for that elusive, ideal golden-brown exterior with a soft, gooey interior. Sandwiched between sweet graham crackers with a few squares of a classic Hershey bar, my sisters and I savored these simple campfire classics. This S’mores Pie captures that same spirit of pure Americana, offering a slightly more elegant and polished version that is absolutely ideal for celebrating the birth of our nation, or any summer day.

The Perfect Centerpiece for Your 4th of July Celebration

This S’mores Pie recipe first made its debut in Gourmet magazine back in 2006, a testament to its timeless appeal. Over a decade ago, I first served this at our 4th of July potluck dinner, and its impact was immediate. Even now, after many reappearances, my friends remain thoroughly impressed by the combination of its perfectly crunchy graham cracker crust, the rich, fudgy chocolate filling, and especially the delicate, homemade marshmallow layer. It’s a dessert that consistently steals the show, prompting countless requests for the recipe.

To achieve that signature toasted marshmallow look, I often bring out my trusty culinary mini-torch to brûlée the top just before serving. This step adds a beautiful golden-brown finish and a slight caramelized flavor that truly completes the s’mores experience. It’s a small touch that makes a big difference, transforming the pie into an irresistible visual and culinary delight. Without fail, this S’mores Pie is always the first dessert to disappear from the table, a clear sign of its universal appeal and deliciousness.

Mastering the Marshmallow Topping: Expert Tips for Success

While the graham cracker crust and the rich chocolate ganache-like filling are relatively straightforward to prepare, the homemade marshmallow topping can sometimes feel a bit more challenging. However, with these expert tips and a little patience, you’ll achieve a perfectly fluffy, stable, and utterly delicious marshmallow layer every time.

  • Choose the Right Gelatin: The foundation of a stable marshmallow topping is unflavored gelatin. Make sure to track down and purchase plain, unflavored gelatin (like the Knox brand) which is readily available at most major supermarkets. This ingredient is crucial for giving your topping its distinct structure and airy texture.
  • Bloom the Gelatin Properly: Before you begin, the gelatin must be “proofed” or “bloomed” in cold water. This simply means sprinkling the gelatin granules over a small amount of cold water and letting it sit for about a minute. This allows the gelatin to soften and dissolve evenly when later heated, preventing lumps in your marshmallow.
  • Accurate Sugar Syrup Temperature is Key: You will be making a sugar syrup by heating sugar, water, and corn syrup. The critical step here is to bring this mixture up to precisely 260°F (127°C). An accurate candy thermometer is absolutely essential for monitoring this temperature. If the syrup doesn’t reach the correct temperature, your marshmallow may not set properly or could be too sticky. If it goes too high, it might become brittle.
  • Patience with Whipping Time: The marshmallow topping requires a significant amount of whipping time to transform from a frothy liquid into a thick, glossy, and bright white cloud. Using a stand mixer with a whisk attachment will make this process considerably easier and more efficient, but a hand mixer can also achieve excellent results with a bit more patience and arm strength. Keep whipping until the mixture is voluminous and holds stiff peaks.
  • The Art of Toasting: To achieve that iconic golden-brown, slightly crispy marshmallow top, a culinary torch is your best friend. It allows for precise browning without overcooking the pie. Hold the torch a few inches away and move it continuously for even color.
  • Alternative for Simplicity: If making homemade marshmallow seems too daunting or if you’re short on time, there’s an excellent shortcut. Purchase large, store-bought marshmallows, cut them in half to create short rounds, and arrange them closely over the cooled chocolate filling. Then, use a culinary torch to brown them. Alternatively, you can carefully place the pie under your oven’s broiler for a minute or two, but watch it very closely as marshmallows can go from golden to burnt in a matter of seconds!

Frequently Asked Questions About S’mores Pie

What Does S’mores Stand for?

The name “S’mores” is a delightful contraction of the phrase “‘some more.” These irresistible, no-bake treats are said to have originated with the Girl Scouts, first appearing in their official handbook in the 1920s.

How do you Slice a Sticky Pie?

Slicing through a sticky pie like this S’mores Pie can be tricky, but a simple trick makes it much easier: heat your knife. You can do this by dipping a large, sharp knife into very hot water for a few seconds or, carefully, waving it quickly over an open flame (then wiping clean). The warm blade will glide through the sticky filling and marshmallow with much greater ease. Remember to clean and reheat your knife frequently between slices for the cleanest cuts.

What is in Homemade Marshmallows?

Homemade marshmallows are surprisingly simple to make and taste infinitely better than store-bought versions. The basic ingredients typically include unflavored gelatin, sugar, corn syrup, vanilla extract, powdered sugar, cornstarch, and a pinch of salt. The last time I whipped up a batch of homemade marshmallows was well before I started blogging, and I brought them to a neighbor’s house for s’mores – they were incredibly impressed!

How Do You Throw a S’mores Party?

Hosting a s’mores party is wonderfully easy and always a hit! Set up a dedicated “s’mores station” table near your grill, campfire, or fire pit. The absolute essentials are long roasting sticks or metal skewers, plenty of graham cracker squares, classic milk chocolate bars (Hershey bars are always a favorite!), and large marshmallows. To elevate your party, consider offering a variety of fun additions like chocolate chip cookies or Oreos instead of graham crackers, different types of chocolate (dark, white, Reese’s Peanut Butter Cups, Milky Way bars), sliced strawberries, caramel sauce, Nutella, or peanut butter. Always keep a bucket of water or a fire extinguisher nearby for safety, as molten marshmallows can be incredibly hot and sticky!

Serving, Storage, and Make-Ahead Tips

To get the most enjoyment out of your S’mores Pie, consider these tips:

  • Serving Temperature: While delicious chilled, allowing the pie to sit at room temperature for about 15-20 minutes before serving can soften the chocolate filling slightly, enhancing its fudgy texture.
  • Garnishes: A sprinkle of mini chocolate chips, a dusting of cocoa powder, or a few extra mini marshmallows can add to its visual appeal.
  • Storage: Store the S’mores Pie, covered loosely with plastic wrap (lightly sprayed with non-stick spray to prevent sticking to the marshmallow), in the refrigerator for up to 3-4 days. The crust may soften slightly over time, but the flavors will remain delightful.
  • Make Ahead: This pie is an excellent make-ahead dessert! You can prepare the graham cracker crust and chocolate filling a day in advance and store them separately. The marshmallow topping is best made and applied closer to serving, but the entire pie can be assembled and chilled several hours before your event.

S'mores Pie - the quintessential summer picnic dessert

The Recipe:

S’mores Pie

Prep Time
40 minutes
Cook Time
40 minutes
Total Time
1 hour 20 minutes
Yield
8 servings

A graham cracker crust, fudgy chocolate filling, and marshmallow topping make this pie a quintessential Independence Day treat!

Ingredients

For graham cracker crust:

  • 8 tablespoons butter, melted
  • 1 ¾ cups graham cracker crumbs
  • 2 tablespoons sugar

For chocolate filling:

  • 7 ounces semisweet chocolate, finely chopped
  • 1 cup heavy cream
  • 1 large egg, at room temperature

For marshmallow topping:

  • 1 teaspoon unflavored gelatin (I used Knox brand)
  • ½ cup cold water
  • ¾ cup sugar
  • ¼ cup light corn syrup
  • ½ teaspoon vanilla

Instructions

  1. Preheat oven to 350ºF (175°C).
  2. Mix melted butter, graham cracker crumbs, and sugar until well combined. Pat firmly into a greased, 9-inch pie plate.
  3. Bake for 12 minutes or until lightly browned. Cool completely on a wire rack.
  4. When the crust is cool, preheat the oven to 350°F (175°C) again. Place the finely chopped chocolate in a large, heatproof bowl.
  5. Bring heavy cream just to a boil in a heavy saucepan (or microwave in a large Pyrex measuring cup until the cream starts to boil), then immediately pour the hot cream over the chopped chocolate.
  6. Let stand for a minute or two to allow the chocolate to melt, then whisk until the chocolate is fully melted and the mixture is smooth and glossy.
  7. Whisk in the egg and a pinch of salt until thoroughly combined. Pour this smooth chocolate filling into the prepared graham cracker crust.
  8. Cover the edge of the pie crust with aluminum foil to prevent over-browning. Bake until the chocolate filling is almost set but still slightly wobbly in the center, about 25 minutes. Remove to a rack and cool to room temperature for about 1 hour.
  9. To prepare the marshmallow topping: Sprinkle gelatin evenly over ¼ cup cold water in the metal bowl of your stand mixer (or another large heatproof bowl if using a hand mixer). Let stand until the gelatin is softened, about 1 minute.
  10. In a separate heavy saucepan, stir together sugar, corn syrup, a pinch of salt, and the remaining ¼ cup water.
  11. Bring the mixture to a boil over medium heat, stirring continuously until the sugar is completely dissolved. Continue to boil without stirring until the liquid reaches precisely 260ºF (127°C) on a candy thermometer.
  12. With the gelatin mixture in your mixer bowl, begin beating at medium speed. Carefully and slowly pour the hot sugar syrup into the gelatin mixture, ensuring the stream avoids the sides of the bowl and the beaters.
  13. Once all the syrup has been added, increase the mixer speed to high and continue beating for about 5 minutes, or until the mixture is very thick, white, and has increased significantly in volume.
  14. Add the vanilla extract and beat until just combined. Spoon the marshmallow topping onto the center of the cooled pie, spreading it evenly to the edges with an offset spatula if needed, creating a beautiful domed top.
  15. Chill the pie, uncovered, for 1 hour to allow the marshmallow to set slightly. Then, cover loosely with plastic wrap (sprayed with non-stick cooking spray to prevent sticking) and chill for an additional 3 hours, or until fully set.
  16. To serve, brown the marshmallow top using a handheld kitchen torch for an authentic toasted s’mores look. Alternatively, place the pie on a baking sheet, cover the sides of the crust with foil, and broil (about 4 inches from the heating element) for approximately 1-3 minutes, watching constantly, until the top is golden brown.
  17. Cool for about 10 minutes before cutting and serving.
  18. For the easiest and cleanest slicing, dip a large, sharp knife into very hot water, dry the knife, and then slice. Repeat this process for each slice.

Notes

The homemade marshmallow topping, while rewarding, can be a bit finicky. If you’d prefer a simpler route, you can use large store-bought marshmallows. Cut them in half and arrange them closely over the cooled chocolate filling. Use a culinary torch to brown them for that classic s’mores effect.
