Essential Ingredient Notes for Your Perfect Salad

Crafting an exceptional Salmon Watercress Salad begins with selecting the finest ingredients. Here’s a detailed look at what you’ll need and some tips for choosing and preparing them:

  • Vinaigrette Staples:
    • Strawberry Jam or Preserves: A spoonful of quality strawberry jam or preserves is the secret to the vinaigrette’s luscious sweetness and body. I often reach for Bonne Maman preserves for their rich fruit flavor and ideal consistency. This ingredient simplifies the dressing process while delivering authentic strawberry essence.
    • Dijon Mustard: Essential for emulsifying the dressing and adding a subtle tang, Dijon mustard, such as Grey Poupon, helps bind the oil and vinegar, preventing separation and contributing a sophisticated depth of flavor without being overpowering.
    • Champagne Vinegar: This light, delicate vinegar offers a gentle acidity that perfectly complements the strawberries and watercress without dominating the other flavors. Its refined character makes it an ideal choice for bright, fresh salad dressings.
    • Extra Virgin Olive Oil: A good quality extra virgin olive oil is crucial for a flavorful vinaigrette. I prefer California Olive Ranch for its smooth, fruity notes. It provides healthy fats and a silky texture to the dressing.
    • Salt and Freshly Ground Black Pepper: These fundamental seasonings are vital for enhancing all the flavors in the vinaigrette and the salad. Always season to taste, adjusting until the balance is just right.
  • Star Ingredients:
    • Salmon Fillets: Opt for fresh, skin-on salmon fillets, ideally between 4-6 ounces each. The skin helps keep the salmon moist during roasting and can be easily removed after cooking if preferred. Salmon is a powerhouse of Omega-3 fatty acids, making this salad incredibly heart-healthy. Seasoning generously with salt and pepper before cooking is key to a well-flavored fish.
    • Fresh Watercress Leaves: A 4-6 ounce bag of fresh watercress provides the crisp, peppery foundation for this salad. Look for vibrant green leaves without any wilting or yellowing. Its distinctive flavor is what makes this salad so unique.
    • Fresh Strawberries: One cup of ripe, fragrant sliced strawberries brings natural sweetness, juicy texture, and a burst of color. Choose firm, bright red berries for the best flavor and appearance.
    • Green Onions: Thinly sliced green onions (using both the white and a bit of the green parts) add a mild, fresh oniony kick that brightens the salad without being too pungent.
    • Slivered Almonds: A quarter cup of slivered almonds introduces a delightful crunch and nutty flavor. Toasting them lightly beforehand is highly recommended, as it brings out their essential oils and intensifies their flavor. This can be done quickly in a dry skillet over medium heat or on a sheet pan in the oven. Be sure to watch them closely, as they can burn very quickly.

Each ingredient plays a vital role in creating the harmonious and satisfying experience of this healthy salmon salad.

Crafting a Simple Yet Exquisite Berry Vinaigrette

Discover the magic a simple spoonful of jam can bring to your salad dressing! For years, I’ve adored making raspberry vinaigrettes, but the arrival of spring and its bounty of ripe, fragrant strawberries inspired me to create this delightful strawberry version. This vinaigrette isn’t just for dressing the salad; it also serves as a fabulous glaze for the salmon, truly making it a versatile component of this dish.

The beauty of this berry vinaigrette lies in its simplicity and the depth of flavor it imparts. The strawberry jam dissolves beautifully into the vinegar and mustard, creating a base that’s both sweet and tangy. When the extra virgin olive oil is slowly whisked in, it emulsifies into a smooth, creamy dressing that clings perfectly to every leaf of watercress. The result is a dressing that perfectly complements the peppery greens and the rich salmon, tying all the components of this salad together seamlessly.

Pairing this vibrant dressing with crisp watercress, succulent roasted salmon, sweet sliced strawberries, and the subtle crunch of toasted slivered almonds creates an irresistible combination. This Salmon Watercress Salad with its signature berry vinaigrette has quickly become one of the best salad recipes of the season, cementing its place as a go-to summer entree that is both light and incredibly satisfying.

Frequently Asked Questions About This Healthy Salmon Salad

What is Watercress and Why is it Good for You?

Watercress is an aquatic leafy green vegetable belonging to the mustard family. Its small, crisp green leaves offer a distinct peppery, slightly bitter flavor, making them an excellent complement to sweeter ingredients like berries. Nutritionally, watercress is a superfood, packed with vitamins A, C, and K, as well as calcium, iron, and antioxidants. It’s known for its potential health benefits, including supporting bone health, boosting immunity, and offering anti-inflammatory properties.

What Should I Look for When Selecting Watercress at the Market?

When choosing watercress, always look for crisp, vibrant green leaves. The stems should appear fresh and firm. Avoid any bunches that show signs of wilting, yellowing, or sliminess, as these indicate it’s past its prime. Ideally, choose watercress that looks robust and full of life, often found in the refrigerated section of the produce aisle.

How Do You Properly Store Watercress to Keep it Fresh?

To maximize the freshness of your watercress, there are a couple of effective storage methods. You can keep it refrigerated in its original plastic bag, ensuring it’s sealed to retain moisture. For an even longer shelf life, treat it like a bouquet of flowers: snip off the bottoms of the stems and place the bunch in a glass filled with about an inch of water. Cover the top loosely with a plastic bag and refrigerate. This method helps keep the leaves crisp and hydrated for several days.

Can I Use Other Greens Instead of Watercress?

Absolutely! While watercress offers a unique peppery kick that truly defines this salad, you can certainly substitute it with other greens if you prefer or if watercress isn’t available. Arugula is an excellent alternative due to its similar peppery flavor. Spinach, baby kale, or a spring mix would also work well, offering a milder base for the vibrant strawberry vinaigrette and salmon.

What are the Health Benefits of Eating Salmon?

Salmon is renowned for being one of the healthiest foods you can include in your diet. It’s an excellent source of high-quality protein, essential for muscle repair and growth. More importantly, salmon is loaded with Omega-3 fatty acids, specifically EPA and DHA, which are crucial for brain function, heart health, reducing inflammation, and even improving mood. It also provides significant amounts of B vitamins, potassium, and selenium.

Ingredients

For the Salad Dressing:

  • 1 tablespoon strawberry jam or preserves
  • 1 teaspoon Dijon mustard
  • 2 tablespoons champagne vinegar
  • ¼ cup extra virgin olive oil
  • Salt and freshly ground pepper, to taste

For the Salmon:

  • 4 salmon fillets, skin on (4-6 ounces each)
  • Salt and pepper, to taste

For the Salad Assembly:

  • 4 ounce bag fresh watercress leaves
  • 1 cup sliced fresh strawberries
  • 2 green onions, white and a bit of the green, sliced thinly
  • ¼ cup slivered almonds, toasted and cooled

Instructions

  1. Prepare the Vinaigrette: In a small bowl, whisk together the strawberry jam (or preserves), Dijon mustard, and champagne vinegar until well combined. Slowly drizzle in the extra virgin olive oil while continuously whisking until the mixture is fully emulsified and smooth. Season with salt and freshly ground pepper to taste. Set the dressing aside.
  2. Roast the Salmon: Preheat your oven to 400°F (200°C). Place the salmon fillets skin-side down on a baking sheet. Season both sides of the salmon generously with salt and pepper. Roast in the preheated oven for about 12 minutes, or until the salmon is nearly cooked through.
  3. Glaze and Broil Salmon: While the salmon is roasting, re-whisk the strawberry vinaigrette. After 12 minutes, remove the salmon from the oven and brush about 2 tablespoons of the vinaigrette evenly over the top of the fillets. Turn on your broiler. Broil the salmon for approximately 2 minutes, or until the tops are lightly browned and caramelized. Keep a close eye on the salmon to prevent burning. Remove from oven and let cool slightly. You can refrigerate the salmon if you prefer it cold on your salad.
  4. Assemble the Salad: In a large mixing bowl, combine the watercress, sliced fresh strawberries, thinly sliced green onions, and toasted slivered almonds. Add enough of the prepared strawberry vinaigrette to lightly coat the greens and other ingredients, tossing gently to combine.
  5. Serve: Divide the salad mixture evenly among 4 individual salad bowls or plates. Top each salad with a piece of roasted salmon, either cold or at room temperature. If desired, drizzle any remaining salad dressing over the salmon and greens for an extra burst of flavor. Serve immediately and enjoy!

Notes

If watercress is not readily available or if you prefer a milder green, feel free to substitute with baby spinach, arugula, or a spring mix. Ensure toasting the slivered almonds as it significantly enhances their flavor and crunch.
