The holiday season often brings out a special kind of creativity, much like the “Martha Stewart” side of my own mother used to emerge around Christmastime. She would meticulously bake gingerbread, then piece it together with sweet icing to construct magnificent, snow-covered houses. Those gingerbread houses weren’t just decorative; they were edible works of art, a centerpiece of our holiday celebrations.

We, as children, would eagerly help with the decorating, adorning the gingerbread walls with an array of bulk penny candies in vibrant holiday colors. Every minute was filled with joy, and our fingers grew stickier with each sampled candy. While years have passed since I last crafted a gingerbread house, the spirit of gingerbread lives on in our family traditions. Today, chewy ginger cookies and classic gingerbread men remain staples, evoking that same heartwarming nostalgia and holiday cheer.

This year, for our special Christmas Week theme focusing on “gingerbread surprise,” I decided to venture beyond the traditional cookies and explore a new, exciting creation: these delectable gingerbread biscotti, elegantly finished with a luscious white chocolate drizzle. This unique twist on a holiday classic offers a delightful texture and an intensified ginger flavor that any ginger lover will adore. For an extra punch of warmth and spice, I’ve incorporated finely chopped crystallized ginger directly into the dough, ensuring every bite is bursting with festive flavor. These biscotti are not just cookies; they are a perfect tea dipper, a delightful companion for your morning coffee, or a standout addition to any holiday dessert platter.

Beyond their incredible taste, these biscotti hold a special place in the spectrum of holiday baking. Biscotti, the traditional Italian twice-baked cookies, are renowned for their crisp texture, making them ideal for dipping without crumbling. Infusing this classic with the bold, aromatic spices of gingerbread—cinnamon, ginger, cloves, and allspice—transforms it into a truly festive indulgence. The initial bake creates a dense, flavorful loaf, which is then sliced and baked a second time to achieve that signature crunch. The final touch of a simple yet elegant white chocolate drizzle adds a touch of sweetness and visual appeal, making them truly irresistible.

Gingerbread is more than just a cookie; it’s a sensory experience. Hard Italian cookies infused with the festive flavor of gingerbread, perfect for dipping!

5 out of 5 stars (5 ratings)

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/4 cups packed brown sugar
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup molasses
  • 2 tablespoons finely chopped crystallized ginger
  • 1/2 cup chopped white chocolate (for mixing into dough)
  • 1/2 cup chopped white chocolate (for drizzle)

Instructions

  1. Preheat your oven to 350ºF (175ºC). Line a large baking sheet with parchment paper and set it aside.
  2. In a large bowl, whisk together all the dry ingredients: flour, brown sugar, ginger, cinnamon, cloves, allspice, baking powder, baking soda, and salt. Set this mixture aside. In a separate measuring cup, whisk together the eggs and molasses until well combined.
  3. With your stand mixer on low speed, gradually pour the egg and molasses mixture into the dry ingredients. Mix until the dough is well combined and comes together. Stir in the chopped crystallized ginger and the 1/2 cup of chopped white chocolate.
  4. Divide the dough in half. On the prepared parchment-lined baking sheet, form each half into a log approximately 10 inches long and 1 1/2 inches wide. Ensure the logs are relatively uniform in thickness for even baking.
  5. Place the dough logs about 4 inches apart on the baking sheet to allow for spreading. Bake for 30-35 minutes, or until the surface of the logs springs back when gently touched. The logs should be firm and lightly golden. Remove from the oven and let them cool on the baking sheet for 10 minutes.
  6. Carefully transfer one warm log from the parchment paper to a cutting board. Using a sharp serrated knife, cut the log into 3/4-inch thick slices on the diagonal. Repeat this process with the second log.
  7. Return the sliced biscotti pieces to the parchment-lined pans, placing them cut-sides down. Bake for an additional 10-20 minutes, depending on your preference for dryness and crunchiness. For a classic crisp biscotti, I recommend baking for an extra 10 minutes.
  8. Once the second bake is complete, remove the biscotti from the oven and transfer them to a wire cooling rack to cool completely.
  9. When the biscotti are completely cool, prepare the white chocolate drizzle. Place the remaining 1/2 cup of chopped white chocolate in a small ziplock bag. Melt the chocolate in the microwave in 15-20 second intervals, kneading the bag between each interval, until smooth and fully melted. Snip a tiny corner off the ziplock bag and drizzle the melted chocolate over the cooled biscotti. Allow the chocolate to set before storing or serving.

Notes

A blog follower who tried this recipe reported that she needed to add some water to the dough so that it held together. If you find your dough too dry and crumbly, add just enough water, one teaspoon at a time, until your dough can be easily formed into logs. The consistency can vary slightly depending on your flour and humidity levels.

This delightful recipe was inspired by a similar one found in Fine Cooking magazine, adapted to bring you the best gingerbread flavor.
