Mini Lime Cheesecakes with all the incredible flavors of your favorite margarita cocktail, perfect for any celebration!

Ingredients

Crust:

  • ¾ cup graham cracker crumbs
  • 1 tablespoon sugar
  • 2 tablespoons melted butter

Cheesecakes:

  • 12 ounces cream cheese, at room temperature
  • ½ cup sugar
  • ½ cup sour cream
  • 1 tablespoon fresh lime juice
  • 1 teaspoon fresh lime zest
  • 1 ½ teaspoons Grand Marnier or Cointreau
  • 1 tablespoon tequila
  • 2 eggs, at room temperature
  • Lime slices, fresh berries and sweetened whipped cream, to garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray your mini cheesecake tin with nonstick cooking spray.
  2. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until thoroughly combined. The mixture should resemble wet sand.
  3. Evenly divide the graham cracker mixture among the 12 wells of the mini cheesecake pan. Using a tassie tamper or your fingers, firmly press the mixture into the bottom of each well to form a compact crust. Bake for 5 minutes, then remove the pan to a wire cooling rack while you prepare the cheesecake filling.
  4. In a stand mixer fitted with a paddle attachment (or using a hand mixer), beat the softened cream cheese with the sugar on medium-low speed until smooth and creamy, scraping the bottom and sides of the bowl with a spatula as needed to ensure no lumps remain.
  5. Add the sour cream, fresh lime juice, lime zest, Grand Marnier (or Cointreau), and tequila to the cream cheese mixture. Mix on low speed until all ingredients are just combined and the mixture is uniform.
