Shortbread, fudge, jam and a layer of crumbs makes for an out of this world bar cookie!

Ingredients

  • 2 sticks unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup bittersweet chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 14-oz can sweetened condensed milk
  • 1/2 cup chopped pecans
  • 1/2 cup raspberry preserves

Instructions

  1. Preheat oven to 350ºF (175ºC). Line a 9×13 inch baking pan with nonstick foil, leaving an overhang on the sides for easy lifting.
  2. In a large bowl, cream the softened butter and brown sugar together until light and fluffy.
  3. Gradually mix in the all-purpose flour and salt until the mixture is crumbly and well combined.
  4. Reserve 3/4 cup of the crumb mixture for the topping. Press the remaining 1 3/4 cups of crumb mixture firmly onto the bottom of the prepared baking dish to form an even crust. Bake for 10-12 minutes, or until golden brown around the edges.
  5. If using, stir the chopped pecans into the reserved crumb mixture. Set aside.
  6. In a microwave-safe bowl, combine the sweetened condensed milk and bittersweet chocolate chips. Heat in the microwave in 30-second intervals, stirring well after each interval, until the chips are completely melted and the mixture is smooth and glossy.
