  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried savory
  • 6 cups chicken broth (or 6 cups water + 3 chicken bouillon cubes)
  • 2 medium-sized carrots, trimmed, peeled, quartered lengthwise and cut into 1-inch long pieces
  • 2 stalks of celery, trimmed and cut into 1 inch long pieces
  • 1 medium-sized turnip, peeled and diced
  • 1 medium-sized potato, peeled and diced
  • ⅓ medium-sized green cabbage, cored, outer leaves removed, shredded
  • 2 chicken legs, deskinned
  • 1 ½ teaspoons garlic salt
  • 1 teaspoon white pepper
  • ½ teaspoon crushed red pepper
  • 2 pork sausages, cooked and cut into ½-inch slices (Smoked Linguica Sausage recommended for best flavor)

Instructions

  1. Rinse the cannellini beans, cover them with a few inches of water, bring to a boil, and boil for 1 minute. Turn off the heat, cover, and let them sit for 1 hour or refrigerate overnight. This helps to soften the beans for cooking.
  2. When ready to cook, drain and rinse the beans thoroughly, then set them aside. Prepare a large Dutch oven or soup pot and place it over medium-low heat.
  3. Add the bacon pieces to the Dutch oven. Cook, turning them often, until they are browned and crispy. Transfer the crispy bacon bits to a bowl, leaving the rendered fat in the pot for the next step.
  4. Keeping the heat at medium-low, add the Spanish onion, green onions, crushed garlic, leek, bay leaves, dried thyme, and dried savory to the pot.
