  • 10 ounces vanilla caramels (such as Werther’s Chewy Caramels)
  • 2-3 tablespoons heavy cream (36% butterfat)
  • ½ teaspoon pure vanilla extract (for caramel)
  • 36 Hershey’s Kisses, unwrapped

Instructions

  1. In a large bowl, cream together the softened butter, Biscoff spread, granulated sugar, and brown sugar until the mixture is light and creamy.
  2. Beat in the egg until fully blended into the mixture.
  3. Stir in the 1 tablespoon of milk and 1 teaspoon of vanilla extract. Gradually add the flour, baking soda, and salt, mixing until just combined and a soft dough forms. Do not overmix.
  4. Cover the cookie dough and chill it in the refrigerator for at least 30 minutes. Meanwhile, preheat your oven to 350ºF (175ºC). Line baking sheets with parchment paper or silicone mats.
  5. Once chilled, scoop rounded tablespoonfuls of dough and roll them into smooth balls. Place the dough balls about 2 inches apart on the prepared baking sheets.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. Immediately upon removing from the oven, use the back of a round tablespoon or a small measuring spoon to make a deep indentation in the center of each warm cookie. This creates the perfect well for the caramel.
  7. Transfer the cookies to a wire rack to cool slightly while you prepare the caramel.
  8. To make the caramel topping, combine the unwrapped caramels and 2 tablespoons of heavy cream in a microwave-safe bowl. Microwave for 1 minute, then stir well. Continue to microwave in 30-second intervals, stirring thoroughly after each, until the mixture is completely smooth and melted. If needed, add an additional tablespoon of cream to achieve the desired consistency. Stir in the ½ teaspoon of vanilla extract.
  9. Spoon a teaspoon (or slightly less) of the warm caramel mixture into the indentation of each cookie. While the caramel is still pliable, gently press one unwrapped Hershey’s Kiss into the center of the caramel on each cookie.
