Ingredients

  • ¼ cup olive oil
  • 1 cup sliced carrots
  • ½ cup chopped celery
  • ½ cup chopped onion
  • 2 tablespoons minced garlic
  • 4 links mild Italian sausage, sliced
  • 8 ounces sliced mushrooms
  • 14.5 ounce can of diced tomatoes with juice
  • ½ cup dry red wine
  • 5 cups chicken broth
  • ½ teaspoon crushed red pepper flakes, optional
  • 6 ounces uncooked farro, rinsed and soaked for at least 3 hours
  • Bag of baby spinach
  • 1-1 ½ teaspoons salt (depending on how salty your broth is—I didn’t add any)
  • ½ teaspoons freshly ground pepper
  • 3 tablespoons fresh thyme, chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced carrots, chopped celery, chopped onions, and minced garlic. Sauté until the onions become translucent, about 5-7 minutes.
  2. Add the sliced Italian sausage to the pot and cook, breaking it apart with a spoon, until it is browned. Drain any excess fat if necessary. Stir in the sliced mushrooms and cook until they have softened, about 5 minutes.
  3. Pour in the diced tomatoes with their juice, dry red wine, chicken broth, and crushed red pepper flakes (if using). Add the rinsed and soaked farro. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer, cover the pot, and cook for about 1 hour, or until the farro is tender and has absorbed much of the liquid. Stir occasionally to prevent sticking.
  5. Stir in the baby spinach, salt, and freshly ground pepper. Continue stirring gently until the spinach has completely wilted. Finally, stir in the fresh chopped thyme.
  6. Ladle the hot soup into bowls. Serve immediately, topped with fresh grated Parmesan cheese and a drizzle of high-quality olive oil, if desired.
