These chewy Challah Pretzels are made with a rich, eggy challah bread dough, offering a uniquely soft, subtly sweet, and incredibly satisfying snack!

Ingredients

  • 2 packages active dry yeast
  • ½ cup lukewarm water (about 110°)
  • ⅓ cup sugar, plus a pinch
  • 4 ounces butter, cut into pieces
  • 2 tablespoons melted butter
  • 1 cup milk (whole milk preferred)
  • 1 tablespoon honey
  • 2 ½ teaspoons salt
  • 4 eggs, at room temperature, plus 1 egg beaten with 1 egg yolk and 1 tablespoon cream for glaze
  • 6 cups bread flour (amount may vary depending on humidity)

Instructions

  1. In a small bowl, dissolve the active dry yeast in ½ cup lukewarm water with a pinch of sugar. Let it stand for about 5-10 minutes until it becomes creamy and begins to bubble, indicating the yeast is active.
  2. In a microwave-safe container, combine the butter pieces and milk. Heat gently in the microwave until the butter is completely melted. Stir in the remaining ⅓ cup of sugar, the honey, and the salt. Allow the mixture to cool slightly until it is lukewarm (not hot to the touch), as hot liquid can kill the yeast.
  3. Pour the lukewarm milk mixture into the bowl of your stand mixer. Using the paddle attachment, stir in the dissolved yeast mixture and the 4 room-temperature eggs until well combined.
  4. Gradually add 5 cups of the bread flour to the wet ingredients and mix on low speed until just combined. Switch to the dough hook attachment and knead the dough for 8-10 minutes. Continue kneading until the dough is smooth, elastic, and pulls away cleanly from the sides of the bowl. Add additional flour, a tablespoon at a time, if the dough is too sticky.
  5. Generously brush a large clean bowl with some of the melted butter. Transfer the kneaded dough to the buttered bowl, turning it once to coat, then brush the top with the remaining melted butter. Cover the bowl tightly with plastic wrap and then with a kitchen towel. Let the dough rise in a warm, draft-free location until it has doubled in size, which typically takes about 2 hours.
  6. Once the dough has doubled, gently punch it down to release the air. Re-cover the bowl with plastic wrap and the towel, and let it rise again until doubled in bulk, approximately 1¼ hours. This second rise develops more flavor and improves the texture.
  7. While the dough is on its second rise, line two large rimmed baking sheets with parchment paper. Once the dough has completed its second rise, transfer it to a lightly floured work surface. Divide the dough in half. Cover one half with plastic wrap to prevent it from drying out.
  8. Divide the uncovered half of the dough into 8 equal pieces. Using lightly floured hands, roll each piece into a 12-14-inch rope. To shape into a classic pretzel, make a U-shape with the rope, then cross the ends over each other twice, bringing the ends down to meet the bottom of the U and gently pressing to seal. Repeat this process with the remaining dough pieces.
  9. Arrange the shaped pretzels on the prepared baking sheets, leaving some space between each. Cover them loosely with plastic wrap or a clean towel and let them rise again for a final time until doubled in size, about 30 minutes.
  10. Towards the end of the final rise, preheat your oven to 375ºF (190ºC). In a small bowl, whisk together the beaten egg, egg yolk, and cream to create the glaze.
  11. Just before baking, generously brush the risen pretzels with the egg and cream glaze. Sprinkle them with your preferred topping – coarse salt, sesame seeds, or poppy seeds.
  12. Bake the pretzels for 20 minutes, then rotate the pans to ensure even browning. If desired, you can brush them with a little more glaze at this point for an extra sheen. Continue baking for another 10 minutes, or until the pretzels are a beautiful golden brown. Serve warm and enjoy immediately!
