  • 8 ounces fresh Mozzarella balls, cut in half. I used Ciliegine, oval shaped balls.
  • Shredded Fresh Basil to taste, ½-1 cup
  • Juice of 3 Limes, ½ cup
  • ½ cup Olive Oil
  • 2 tablespoons honey, optional (I used it to balance out the tartness of the lime juice)
  • Salt and Freshly Ground Black Pepper to taste

  1. Blanch the corn in salted boiling water for 2-6 minutes, depending on its freshness. For corn fresh from the farmers’ market, 2 minutes should be sufficient. Let it cool completely.
  2. Chop all the other vegetables (cherry tomatoes, bell peppers, cucumbers) into uniform, bite-sized pieces and transfer them to a large salad bowl.
